White sesame or tahin, is made of whole sesame carefully hulled in our factory..
This original and unique mechanical process uses no salt or chemical additive.
Tahin retains practically all the nutritional qualities of whole sesame, apart from silicium, which is concentrated on the skin of the sesame seed.
It is air-dried then ground.
It naturally contains more lecithin than whole sesame, which makes it easy to emulsify even in cold water thus making it very handy in the kitchen.
Uses: Sesame puree can be used as a spread alone or with a little honey. It is used in cooking mainly as a substitute for fresh cream.
Recipe idea : White sesame cucumber.
Slice 2 cucumbers and sprinkle them with salt. Add a tablespoonful of tahin and mix. Let it rest for at least 15 minutes.
Mix again and add parsley.
