The peanut is a plant whose fruit is unique in developing underground.
After being lightly grilled on a wood fire, the peanuts are sifted to eliminate the skins, then ground. This drying process allows for improved digestibility whilst preserving the unsaturated acid fats, which promote “good cholesterol”.
With its mild, sweet taste, peanut puree is very rich in proteins. These proteins are well balanced in amino acids making peanut puree a very good food supplement.
Uses: Peanut puree can be used in confectionary, by adding to honey, maple syrup or agave syrup. Mixed with a little water, it livens up salad dressings or vegetable dishes.
Recipe idea : Raw vegetable dressing
Mix 2 tablespoons of peanut puree with 2 tablespoons of vinegar or lemon juice, 1 spoonful of soya sauce (Tamari), 2 tablespoons of water and fresh herbs.
This sauce may be used with all type of raw vegetables.
